Protein Packed Pancakes
Feel like something sweet for breakfast? These protein packed, gluten free and dairy free pancakes may just be the thing you’re looking for!
Protein Pancakes
Serves 2 people – 10 small sized pancakes
2 medium bananas
2 small eggs
1 tsp cinnamon
1 tsp peanut butter
½ tsp baking powder
1 scoop smooth vanilla protein
¼ cup quinoa flakes^
½ cup almond flour
A dash of almond mylk*
Coconut oil, or olive oil for cooking purposes only
Place all ingredients into bowl or blender, mix until batter is smooth. Place pan on medium heat and grease pan with oil of choice. Distribute batter into small pancakes. Flip when several bubbles appear from top side.
Top with your favourites! We have used fresh banana, strawberries, blueberries and maple syrup.
^Feel free to switch this out for more almond flour
*Your mylk of choice – batter should be reasonably thick, add more liquid as needed.
Pro Tip! The smaller the pancakes are the easier they will be to flip and the more likely they will keep their shape.
